Course Description:

Discover how food shapes the world around us—starting with your own plate! In this course, you'll dive into the intricate connections between food production, sustainability, and global markets, all while exploring the rich agricultural landscapes of Asia-Oceania. Split between the vibrant cities of Cairns and Melbourne, this program offers the perfect blend of fieldwork and urban exploration.
In Cairns, you'll embark on unforgettable trips to the lush Atherton Tablelands, known for tropical crops like mangos, pineapples, and coffee. Picture yourself tasting exotic fruits straight from the farm, sipping freshly brewed coffee at a local plantation, and sampling indigenous “bush foods.” Then, shift to Melbourne, where you’ll engage with cutting-edge food sustainability practices and explore how this dynamic city integrates global food trends with environmental challenges. Throughout the course, you’ll see firsthand how agriculture impacts the local environment, including the delicate balance of the Great Barrier Reef. This is your chance to experience the real-world impact of food from farm to table!

Participants should expect to hike up to 3 miles daily, sometimes over rough terrain and steep inclines.
